Best Cookie Ever (Gluten Free Version)

Best Cookie Ever (Gluten Free Version)



Preheat the oven to 375° F. Mix the following ingredients and bake for 6-7 minutes. Cool on rack.

2 sticks margarine or butter, softened                        1 cup sugar
1 cup brown sugar                                                      2 eggs
1 tsp. vanilla                                                               2/3 cup brown rice flour
2/3 cup amarinth flour                                                2/3 cup tapioca flour
2 ½ cups oats                                                              1 tsp. baking powder
1 tsp. baking soda                                                       ½ tsp. salt
1 (12 oz.) bag of chocolate chips                               1 (8 oz.) Hershey bar, grated
1 ½ cup chopped pecans
